Besan Laddu

Ingredients
Laddu Besan - 3 cups : This is a kind of coarse ground besan
Powdered Sugar - 3 cups
Ghee - about 1/4 cup
Cardamom powder - 2 tsps

Preparation
In a wok, roast the besan powder over a low flame. Make sure the flame is not high else it will burn the besan. After roasting the besan, slowly add the powdered sugar and constantly mix over a flame. Keep stirring and slowly adding the sugar. Try and ensure there are no lumps of sugar in the mix.

Now slowly add the ghee to the mix and keep stirring. Add just enough ghee to make it a thick paste. Add the cardamom powder to the hot mixture and mix thoroughly. Switch off the burners and let the dough cool down. Stir the mix at regular intervals to ensure all the ingredients are mixed well.

After the dough cools down and before it becomes too hard, start making the laddus. Grease your palms with ghee, this will ensure the dough does not stick to your palms. Make small round laddoos and let it cool. You may need to reshape the laddoos as they cool down since they may flatten at the bottom.
