Ingredients
Rice - 3 cups of cooked rice
Onion - 1 small onion thinly sliced
Peas - 1/3 cup
Cashews - 1/3 cup
Carrots - 1/3 cup grated
Green Beans - 1/3 cup grated
Garlic - 3 cloves
Corriander - 1/3 cup finely chopped
Curry Powder - 2 tsps
Soy Sauce - 3-4 tbsps or more as needed of Low Sodium Soy Sauce
Cooking Oil - 3-4 tbsps
Chilli - 1 red chilli or 2 tsps of crushed red pepper
Spring onions (scallions) - 3 - cut into small pieces
Pineapple - 1 small can of pineapple chunks or you can cut chunks from a fresh pineapple and the remaining piece can be used as a pineapple boat for the fried rice
Preparation
Cook the rice and keep it in the refrigerator open for at least an hour. This will make the rice a little dry and will not turn soggy later.
Mix 1Tbsp of oil in the rice with your fingers trying to ensure there are no lumps of rice and all the grains are separated. If needed add a little bit more oil.
In a small bowl, mix the curry powder with 3 tbsp soy sauce and keep it aside.
Heat 1 tbsp of oil in a wok and add the sliced onions, minced garlic and chili and stir it. Add the grated carrots, grated beans, cup of peas and cashews and fry it in the oil. Once the cashews are browned, add the pineapple chunks (pieces) and rice and drizzle the mixture of soy sauce and curry powder. Carefully mix the rice adding any more soy sauce if needed. Turn the heat to high and carefully stir fry ensuring the rice is fried. Add salt if required.
Take it off the heat and garnish with spring onions and corriander and serve over a plate or on a pineapple boat. Enjoy!
If you want to add eggs, then you can fry the egg in the oil and scramble it and add it to the mix before you add the rice and pineapple.
