Chicken Parmesan

Ingredients
Chicken Breasts - 2 or 3
Salt  - to taste
Pepper - fresh ground pepper
Flour - 1 or 2 cups
Eggs - 2 or 3
Bread crumbs - preferably with some herbs in it
Parmesan Cheese - 1/4 cup
Mozzarella Cheese - 1/4 cup
Marinara Sauce - 1 or 2 cups depending on your taste

Preparation
First start with the main ingredient, the chicken. The chicken slices have to be thin slices, so take a piece of the chicken breast and place it in between plastic sheets (a ziploc bag). Use a meat tenderizer hammer and slowly pound the chicken flattening it out as you pound it. Sprinkle some salt and fresh ground pepper on the chicken slices.

Take three plates - one with all purpose flour, the other one with an egg wash (beaten eggs) and the third one with bread crumbs. Take each chicken slice and dip it first in the flour making sure you coat the slice completely. Next dip the chicken slice in the egg wash followed by the bread crumbs. Make sure you coat the chicken completely with bread crumbs.

In a small frying pan, heat some oil and lightly fry the chicken pieces. They will be completely cooked when they are being baked so you need to lightly fry the chicken.  Now that all the chicken slices are fried they are now ready to be baked.

In a baking dish, place the chicken slices and pour some marinara sauce over it. Sprinkle fresh parmesan and mozzarella cheese on it. Pre-heat the oven to about 350 degrees and bake the chicken for about 30 minutes or so.

Serve with pasta and enjoy.
