Chocolate Chip Muffin




Ingredients
All Purpose Flour - 1 cup
Butter - 1/2 stick
Vanilla Extract - 1 tsp
Egg - 1
Milk - 1/3 cup
Oil - 1/4 Cup
Sugar - 3/4 cup
Baking Powder - 1 tsp
Chocolate chips - 1/2 cup


Preparation
Beat the butter and oil together to form a light airy mixture. Add the egg and beat it again for another few minutes. Now add the vanilla extract and baking powder and beat some more. Add the sugar in small quantities to the mix and continue beating it after ever addition. If the butter is unsalted, add a pinch of salt else you may just need to sprinkle a little bit of salt and beat it.


Now transfer the mixture to a mixing bowl and slowly add the all purpose flour. Mix it well with a whisk ensuring there are no lumps of the flour. Continue adding the flour in small quantities and mix it well as before. Add the chocolate chips to the mixture and mix well.


Preheat the oven to 400 degrees. In a muffin pan, place the baking paper cups and fill it with the mixture. Make sure you fill only 3/4th of the cup as it will rise when baked. Put the muffin pan in the oven and bake for 25 to 30 minutes.



Let it cool for about 15 to 20 minutes and enjoy!
