Breakfast Burrito

Eggs are always my favorite for breakfast. I can have them in an omelette, scrambled, fried, sunny side up or any which way. This time I made it with a spanish touch and made an egg burrito.

Ingredients
Eggs - 4 or 5
Onions - 1 small onion
Potato - 1/2 a piece of potato
Green Pepper - a small piece
Red Pepper - a small piece
Garlic - 1 or 2 cloves
Green chilli - 1 or 2 depending on how hot you want it
Oil
Salt to taste
Tortilla - 3 to 4 tortillas

Preparation
Peel and cut the potatoes into small pieces. Similarly chop the green pepper, red pepper, onions, garlic and green chilli. Saute the cut ingredients in a small pan with salt and let it simmer for a while.

In a small bowl, beat the eggs (you can remove a couple of egg yolks if you like) and mix it well. Pour the egg into the pan with the mixture and scramble the egg. Warm the tortilla and add a little bit of the mixture on it. Add some cheese and roll it into a burrito shape.

After all the burritos are ready, warm it in a saute pan so that the cheese melts inside the burrito. A better option is to use a panini press to press the burritos.

Enjoy with ketchup or salsa!
