I saw this at an Indian store and decided to make my own!
The paneer bhurji stuffing is baked into the pav and that makes it an easy to eat, non-messy snack.
Ingredients
For the Paneer Bhurji Stuffing
Paneer - small piece grated thin
Potatoes - 2 medium
Green Chili - 1 small or to taste
Ginger - small piece
Garlic - 1 or 2 cloves
Turmeric - 1/2 tsp
Salt to taste
Oil to saute
For the Pav
Flour (Maida) - 3 cups
Milk - 1 cup
Sugar - 1 tsp
Yeast - 1 tsp
Butter - 2 - 3 tsps
Salt to taste
Preparation
Paneer Bhurji
This is a kind of dry bhurji since it will be used as stuffing in the pav batter.
Grate the paneer into thin shredded pieces. Boil the potatoes and mash it. In a pan, heat some oil and sauté finely chopped chili, garlic and ginger. Add some spices like turmeric and salt to taste. Add the paneer and also the mashed potatoes to it and mix. If the mix is too dry you can add some lemon juice to it and mix. Once the mix cools down, make small balls of this mix and keep aside.
Pav
I saw a recipe on the internet and followed it for most of it -> Pav recipe
In a bowl, warm the milk (not hot - should be lukewarm) and add the sugar and yeast to it and keep it aside for 5 minutes. After five minutes add the flour and salt to it and knead the dough well. Add the butter to it and knead again and leave the dough aside for an hour to rise. Cut the dough into 8 or 9 small balls.. Spread the small dough and place the paneer bhurji ball in the center and cover it with the dough and make it into a bigger ball. Place it in a greased pan and leave it for few hours to rise. Bake the pav in a pre-heated oven at 360 degree Fahrenheit for around 20 to 25 minutes or until you see the top of the pav browning.

Paneer Stromboli
This is an Indian twist to an Italian dish. I incorporated paneer into this Italian dish. You could use a store bought pizza dough or make your own. I made my own and its part of this recipe
Ingredients
Wheat Flour - 2 cups
Salt to taste
Yeast - 2 tsp
Dried Oregano - 2 tsp
Paneer (Cottage Cheese)
Green Chilli
Onion - 1 medium size
Garlic - small piece
Ginger - 2 cloves
Cumin seeds - 1 tsp or more
Turmeric - 1 tsp
Garam Masala - 1 tsp
Spinach a big bunch
Cheese - either a few slices or a cup of shredded cheese
Preparation
Bread Dough. In a small bowl warm a little bit of water and add the dry yeast to it. Mix it well and cover it with a cloth and leave it for 10 minutes. In the meantime, in a large bowl, mix the wheat flour, salt and the dried oregano leaves. Once the yeast is ready, slowly mix the flour mix and the yeast water and make a dough. Knead it well and then leave it in the bowl covered for 10 to 20 minutes. Remove the dough and knead well for another 10 minutes and leave it covered in the bowl for an hour or more. The dough will rise during this time.
Paneer Mix. I made a kind of dry paneer bhurji and used it as the filling for the stromboli. Crumble up the paneer in a bowl and keep it aside. Finely chop the onions, green chillies, garlic and ginger. Heat a small pan and add a little bit of oil to it. Now add the cumin seeds. Once the cumin seeds turn brown, add the onions, green chilies, ginger and garlic and saute them well. Add salt, red chili powder, turmeric and garam masala to the mix. Saute for a few minutes and then add the crumbled paneer to the pan and mix. Cook the mix for about 10 minutes or so.
Preheat the oven to 350 degree Fahrenheit. Roll out to dough into a large rectangle. Spread the spinach leaves over the dough. Sprinkle some shredded cheese on it or place some slices of cheese on top. Now spread the paneer mix over this and sprinkle with some more cheese. Fold in the ends of the dough then roll into a rectangle. Cut some slits on the top, spread a little bit of oil and sprinkle some cheese on top. Bake in oven for 30 minutes or until golden.
The Stromboli is ready to eat.. Enjoy !! You can customize the filling as per your choice.
