I am a non vegetarian, however I love vegetarian foods too. I believe there has to a very good balance of vegetarian and non vegetarian food in what you eat everyday. These are some of my vegetarian dishes. A couple of these I make with and without chicken and hence listed it under vegetarian as well as non vegetarian dishes.

Soya Chunks Masala Load up on your proteins with this excellent dish made from soya chunks
Spinach Enchiladas A typical vegetarian enchilada is loaded with just beans and cheese. I did a variation with spinach and cheese to make it more tastier and healthier
Tomato Omelette Enjoy this dish as a snack or for breakfast. It is an omelette with no eggs at all.
