Veggie and Chicken Panini


Ingredients
Bread - large slices
Onion - one small onion
Garlic - 2 or 3 cloves
Red Pepper - 1
Green Pepper -1
Zucchini - 1 small
Chicken - precooked strips of chicken
Spinach - use baby spinach leaves if you like it
Balsamic Vinegar - 3 or 4 tsps
Olive Oil - 2 or 3 tsps
Basil - 1 tsp
Parsley - 1 tsp
Salt to taste

Pesto Sauce
Cheese - shredded cheese or cheese slices if you don't have shredded cheese

Preparation
Take a skillet and saute the veggies in the oil. Add the salt and balsamic vinegar to the skillet and chicken strips if you want to add chicken. You can also make it all vegetarian if you like to. Add the parsley and basil leaves to the skillet and saute. If you want it spicy you can add some crushed red pepper. Saute the mix in the skillet till the veggies are cooked.

Switch on the Panini press and pre-heat it.

Take two slices of the bread and spread it with Pesto sauce. Put the sauteed mix on one bread. If you like spinach, you can add spinach to the mix. Cover the mix with cheese. Place the second loaf over it and place it in the Panini Press and let it cook for a few minutes. Take it out of the press and slice it.

Enjoy with any sauce or ketchup!

This is one mix I made for the panini. You can add or remove any ingredients you like to get different types of paninis
