Crepe



Crepes are a French breakfast dish. Its like a very thin pancake filled with whatever you prefer. I like to make mine with fruits. Some people use Nutella or some other spread.

Ingredients

All purpose flour (Maida) - 1 cup
Milk - 1 cup
Sugar - 1 tsp
Butter - 2 tsp
Salt - a pinch
Eggs - 2
Strawberries - handful
Blueberries - handful
Banana - a couple
Vanilla extract - 1/2 tsp
Caramel syrup - optional


Preparation 

In a medium to large bowl whisk 2 eggs. Add 3/4 cup of the milk and the vanilla extract and whisk well. To this mix you can add the sugar as well as a pinch of salt and mix. Now slowly add the flour and whisk ensuring there are no lumps formed. Melt the butter and add it to the batter and mix well.  The batter should be of liquid consistency that can be poured but not very thin. Use the remaining milk or add flour as needed to get that consistency. Cover the bowl and keep it aside for 10 to 15 minutes.

For the filling I like to first make a syrup with the strawberries. Use a blender to make a syrup of a few strawberries. Next dice all the fruits into small pieces. The syrup and the fruits make the filling and I also like to use that for some toppings.

Lightly grease a non-stick pan with some oil or butter and heat it on a medium to low flame. Pour a small quantity of the batter on the pan and lift and tilt the pan around till the batter is all around in the pan. Ensure there isn't too much of the batter. We want the crepes to be thin. Cover the pan and cook for a couple of minutes. Now flip the crepe over and let it cook. Spread some of the syrup on the crepe and add a couple of spoons of the dices fruits. Fold the half of the crepe and let it cook over a low flame for a minute.

Transfer it to a plate and sprinkle with powdered sugar and caramel syrup and / or fruits as per your taste. Enjoy !!
